The Best Buttermilk Waffles with Caramelised Banana
This buttermilk waffle recipe is very special to me. Growing up, my Dad would make these regularly on Saturday mornings - these waffles became almost a family tradition. He’s always been a morning person, so by the time my brother and I woke up, the smell of waffles would already be filling the house.
These waffles are always perfectly fluffy and just the right amount of crisp. It’s a comfort food that brings back so many good memories - piling waffles on my plate with maple syrup, yoghurt, fruit and peanut butter.
I’ve also included caramelised banana in this recipe because it works so well with these waffles. As the bananas cook, they turn beautifully golden and sweet, and that rich, sticky caramel flavour pairs perfectly with the light, fluffy texture of the waffles. It’s a simple topping, but it really takes things to the next level.
I still use my Dad’s buttermilk waffle recipe today and it always hits the spot - whether for a slow weekend start or some comfort food to remind me of younger times.

The Best Buttermilk Waffles with Caramelised Banana Recipe
Makes: 8 Waffles
Takes: 25 minutes
WAFFLE INGREDIENTS:
2 cups self-raising flour
1 tsp baking power
1 tbsp caster sugar
2 eggs
100g butter, melted
1 3/4 cups buttermilk
CARAMEL BANANAS:
3 bananas
1-2 tbsp butter
3 tbsp maple or golden syrup
Pinch of sea salt flakes
Yogurt or whipped cream for serving
METHOD:
Make the buttermilk waffles: add all dry ingredients into a large mixing bowl and use a whisk to mix together. Add in eggs, melted butter and buttermilk. Whisk until batter is smooth.
Heat waffle machine and grease with butter or oil. Spoon waffle batter and cook until golden.
While the waffles are cooking, slice the bananas length ways and into quarters, leave the skin on. Heat a pan on medium with the butter and place bananas flesh side down. carefully pour over a little syrup and sprinkle with sea salt. Instead of syrup, you can also use brown sugar and it’s a little less messy. Simmer until caramel has thickened.
Serve buttermilk waffles straight away and top with caramel bananas (without skin) and yogurt, cream, fruit, nut butter or whatever toppings you like - even cereal if you’re my husband.
