Pear, Ginger & Walnut Loaf

I really enjoy using fruit in a loaf — it adds a nice texture and just makes the whole thing more interesting. Pear has been a go-to for me lately. It keeps the loaf beautifully moist, but it also softens as it bakes, so you get these little pockets of flavour without it going mushy. Pear and ginger is one of my favourite combinations — the ginger adds a gentle warmth that balances out the sweetness of the pear in a really nice way.

This loaf also includes chopped walnuts, which add the perfect bit of crunch to contrast the softness of the pear. The walnuts pair so well with both the pear and the ginger — they bring a subtle nuttiness that rounds everything out. That mix of soft fruit, warm spice, and crunchy texture makes the loaf feel a little more layered and satisfying, without being fussy.

I’ve also made the same loaf with apple, and that works great too. Apple holds its shape a bit more, which gives the loaf a bit of bite, and it still plays well with the ginger. Honestly, you can’t go too wrong when you’ve got fruit, spice, and a few walnuts going on in a loaf like this — it’s super easy, full of flavour, and makes a great snack, or something to have with coffee.

Pear, Ginger & Walnut Loaf

Makes: 1 loaf

Takes: 55-60 minutes to bake


Dry Ingredients

  • 1 cup plain flour, levelled

  • 3/4 cup almond meal

  • 1/3 cup coconut sugar

  • 1/3 brown sugar

  • 2 tsp ground ginger

  • 1 tsp cinnamon

  • 1 1/2 tsp baking powder

  • pinch of salt


Wet Ingredients

  • 2 large pears (or can use a combo of apple and pear)

  • 1 tsp vanilla essence

  • 1/2 Cup olive oil

  • 2 eggs


    Topper

  • 1/3 cup chopped walnuts or pecans

  • extra pear or apple slices for the top


Method:

Pre-heat oven to 175 degrees C, fan bake. Grease and line a loaf tin.

Sift flour and baking power into a large mixing bowl. Add in almond meal, coconut sugar, brown sugar, ground ginger, cinnamon, and salt. Mix together.

In a separate bowl grate pears (or apples). Add in vanilla essence, oil and eggs. Mix together until all combined.

Add the wet ingredients into the dry ingredients. Fold together with chopped walnuts or pecans until just combined. Don’t over mix.

Transfer to the lined loaf tin. Top with slices of pear (or apple) and extra chopped pecans.

Bake for 55-60 minutes, until a skewer comes out clean.

Let it cool down for 15-20 minutes before cutting. This Pear Loaf goes beautifully toasted with a morning coffee
