Lychee, coconut and Lime Ninja Creami

Ingredients:

  • 1 tin of Lychee, add the juice in too

  • 1/3 cup coconut milk

  • zest of 1 lime

  • 2 tsp vanilla

  • 1/4 tsp xantham gum

  • optional: 1 tbsp sugar or maple syrup

  • topping: toasted coconut flakes for the topping

Method:

Into a blender or food processor, add in all ingredients except the toasted coconut flakes. Blitz until smooth.

Pour into the Ninja creami tub, place the lid on and put in the freezer for 24 hours.

After 24 hours, take the tub out of the freezer. Place it in the bench for 10 minutes to thaw.

I use the sorbet setting to spin.

Scoop into glasses and top with toasted coconut flakes.
