Happy weekend friends 🩷 I recently made these mini Stonefruit tarts inspired by @juliaostro’s tomato tart I made for cookbook club and the beautiful stonefruit I’ve been seeing at my local market! You could easily use apples, pears, cherries, frozen berries etc… INGREDIENTS: 5-6x stonefruits 1/2 lemon juice Pastry: 200g plain flour 50g wholemeal flour Pinch of salt Optional: 1 tbsp caster sugar 125g unsalted cold butter, cut into 1.5cm cubes 60g ice cold water (+ more if needed) 1 tsp white vinegar Almond croissant filling: 2/3 cup almond meal 1 generous tbsp of softened butter 1/2 tsp almond essence 1/2 egg whisked (use the other half to brush on pastry later) Optional: 1 tbsp icing sugar METHOD: To make pastry — Add into a large mixing bowl: flours, salt and sugar (if using). Add in cold butter (it’s important that it’s cold). Use fingers to press butter into flat pieces and keep going until you have thin lumps of butter throughout the flour. Add in cold water and vinegar. Mix until the dough just comes together. Don’t over mix and add a small dash of water if it’s still dry. It should stick together. Wrap in baking paper and pop in the fridge. Make almond croissant filling — Mix all ingredients into a bowl (leaving half of the egg aside for brushing). Fold together until paste forms. Prep the fruit — Remove fruit stones and slice fruit about 0.5-1cm thick. Toss in lemon juice. Assemble — Pre-heat oven to 190 degrees C. Line a baking tray with baking paper. Divide the pastry dough into 6. Roll into balls. Use a rolling pin to roll out on a lightly dusted bench, until 2-3mm thick. Spread almond filling on the pastry, leaving a 1.5cm boarder, arrange cut fruit and fold the pastry boarder over to enclose the tart. Whisk a tsp of water into the leftover 1/2 egg. Brush onto pastry. Optional: sprinkle sugar over pastry before baking. Carefully place on a lined baking tray. Bake for 35/40mins or until golden and crispy. Serve warm away with greek yogurt, whipped cream, mascarpone or ice cream. I particularly love the transparent option for diffusing light 🥰🥰 BUT this one comes with the silver, gold, solid white and solid black options! Winning! High protein m&m McFlurry! YESS please 🙋🏻‍♀️🍦 [ad] I’ve been eyeing out the Ninja Creami for a while now (along with the rest of the internet, haha), so it was an easy yes when @homeatfarmers wanted to do a collab! Not only are the recipe ideas endless, it’s so fun to use and I love that I can make high protein desserts at the press of a button.   Ingredients: - 250ml milk - 1 scoop of vanilla protein powder  - 1 tbsp instant pudding   Mix-in: Mini M&Ms Method: - 24hrs before eating, mix together in the ninja cream tub the milk, protein powder and instant pudding.  - Cover and put in the freezer for 24hrs.    - Leave out on the bench for 10minutes, and place the frozen tub into the Ninja Creami and use the lite ice cream function. - Once spun, add in the m&ms and hit the mix-in function.  SO YUM!    #ninjacreami #homeatfarmers #highprotein #healthyrecipes #ninjacreamirecipes
